Melt coconut oil in the pan you're going to use for pancakes. Let it cool down before mixing with other ingredients.
Mix all the ingredients together. If making the batter the day before, wait to add the baking soda until just before cooking.
Heat the pan and cook pancakes until golden brown on both sides.
