I wanted plain text formatting to be able to write markdown on my phone.
And Apple Notes doesn't acknowledge markdown syntax, but it offers the same formatting options that are just in an easy-to-access interface.
Making Checklists on phone in Notes is very easy. On a Mac, I really started enjoying Notes after I learned the keyboard shortcut for making a check list.
Apple Notes then offers to sort by checked.
I haven't been able to figure out how to make a horizontal rule -- so I JUST fall back to using markdown's equivalent of three M-dashes, except it's just six `------`to bypass auto-list formatting. Which is good to know because periodically I type in other interfaces that try to autoformat N-dashes into indented lists.
